It’s no secret that Chef Kollinger has become the go-to caterer for celebrities when they find themselves in the Dallas/Fort Worth metroplex. Last night was no exception, as “Cheffrey” created some signature The Spice of Life Catering dishes for legendary rockstar Jon Bon Jovi as he was in town promoting his rosé to a room full of DFW culinary movers and shakers.
The wine, Diving into Hampton Water, is the brainchild of Bon Jovi, his son Jesse and French Wine Maker Gérard Bertrand.
“We found that we shared a love of family, food, friends, great wine and great music,” Bon Jovi told The Drinks Business in November. “Creating this wine with Gérard was just as creative as collaborating with another songwriter. Gérard uses his talents and wine knowledge like a gifted musician.”
The rosé was regarded top pink in the world in Wine Spectator’s coveted Top 100 ranking.
To greet Bon Jovi and guests with a Texas-sized welcome, Chef Kollinger carefully selected five of his staple hors d’oeuvres – all fan favorites among the chef’s long list of clients: Crispy Mini Tuna Tartar Tacos, Slow Braised Short Ribs and Shaved Three Pepper Spinalis. Kollinger and team also presented attendees with Seared Sea Bass Cakes and Crispy Orange Duck Potstickers.
Desserts were a hit: including Lemon Tarts, Chocolate Mousse Shots and Pecan Square Diamonds.
